▪️ Heat oil in pressure cooker and cook onions for 5 minutes or until golden brown ▪️ Add garlic and cook until aromatic ▪️ Add chopped tomatoes and turn heat down, simmer until tomatoes are soft ▪️ Add tomato paste, herbs and spices along with 1/4 cup water and keep simmering for a minute ▪️ Add the beef, carrots and peas and turn heat up cooking for a few minutes until the meat is browned ▪️ Top with 2 cups of water and bring to a gentle boil. Then turn heat down to medium and place the lid of the pressure cooker on. Cook for 45 minutes or until the meat is completely tender* ▪️ Cook the Risoni for a little bit longer than recommended on the pack so it is soft. Drain but keep some of the pasta water. Add to blender/food processor with Ragu, top with the pasta water and blend to a suitable consistency (puree for babies 6-9mths, half blend for 9-12mth and serve as is for toddlers.
The Ragu freezes very well. Store in airtight container for no longer than 2 months at a time. You can also serve the ragu with different types of pasta, rice or with mashed vegetables.
*If you don't have a pressure cooker don't despair! The ragu can be slow cooked as well in a regular pot. Cook on low to medium heat for 1.5hrs until the meat is tender. You will need to check on the meat every half hour and add extra water if needed.
