In a pressure cooker or slow cooker, heat the oil and brown onions to a light golden brown (medium heat)
Add the garlic and cook for 1 minute
Add the chicken and all spices and stir until combined
Place the lid of the cooker on lightly and let cook for 5 minutes (this helps seal some of the meat's juices and absorb the flavours of the herbs and spices)
Add the coriander and water, stir and close the lid tightly
Cook on low/medium heat for 25 minutes or until completely tender
️Serve with rice, pasta, bread or mashed vegetables
This is such a tasty chicken dish and perfect for the whole family. I makethis dish with chicken only although sometimes, if I plan to serve it with plain rice or lentils, i will add some vegetables to it. Potatoes, carrots and peas go very well with chicken in a stew. You can also add some grains and add some more water to make it a bit more soupy, great for colder months!
