In a seperate bowl, whisk one egg white until white and fluffy
Fold the egg whites into the banana mix
Heat pan with a drop of butter and cook two tablespoons of the batter at a time for 2 minutes on each side
Serve with fruit, maple syrup or some butter
This is such an easy recipe to follow and great for those with food allergies! This recipe makes about 4-5 small pancakes so you can double/triple the quantities of ingredients to make more!
I whisk the egg whites as this makes the pancakes really fluffy although if you don't follow that step you will still get light and fluffy cakes as the exclusion of flour means the cakes aren't very dense.
