Place chicken, bean, corn,onion, garlic, carrot, and herbs and spices in a food processor and blend until smooth
Transfer the mixture into a bowl
️Add egg and breadcrumbs and mix with clean hands
Line a baking tray with grease proof paper
Mould mixture into round balls then flatten a little using a touch of warm water
Place onto tray and bake for 20-25 minutes and until golden
Who doesn't love chicken nuggets! These nuggets remind me of the chicken and corn roles I used to buy from the school canteen when I was a little girl, except I now make these for my little angel and they are 100 times healthier than the ones I would buy!
I use the cannelini beans to give the nuggets some density but also a softer texture than traditional nuggets so it is easier for children under 1 year to eat. Mould the nuggets into small hand sized bites so it is easier to hold for little hands. You get to choose what goes into these nuggets! Serve with natural yoghurt or any dipping sauce of choice.
