In a medium sized saucepan, boil the beetrooat until soft (about 40 minutes)
When ready, strain, let cool amd peel
Grate the beetroot into a bowl
Add the apple cider vinegar and mix through
Store in an airtight container in the fridge
Beets are one of my all time favourite vegetables. As a child I was only used to eating beetroot in its natural form (just boiled) and only tasted canned beets as an adult and I am still not a fan!
I love the sweetness of beets, they act as an excellent sugar replacer for meals which is excellent for little eaters. Its popularity is on the rise as a super food too!
I make this simple relish to replace add to meals where I would normally add ketchup or another sauce. It is great on burgers, sandwiches, wraps and salads!
This relish keeps in the fridge for about a week but can also be frozen for later use. I find it is easier to freeze the boiled beetroot and defrost before use because beetroot takes a little longer to cook through so it's always easier to make a bigger batch!
