Place onion, garlic, carrot and coriander in food processor and blend to a fine dice
Remove from food processor and into a large bowl. Add the mince, egg, herbs and spices and breadcrumbs and using your hands combine the mixture well
Grease oven tray with the olive oil or use baking paper
Roll the mixture into small finger sized pieces and place onto tray
Bake the turkey fingers for 40 minutes with 10 minutes resting time
Serve with roast/baked veggies and sauce of choice
Turkey is one of my favourite meats because not only is it super healthy, lean, packed with nutrients but also super tasty too! I tasted something similar to these turkey fingers once at a relatives place so when I came across some turkey mince at the supermarket I thought I had to try and make something similar for Jacob.
The turkey fingers are super soft so easy to eat as finger food for your little ones. Don't overcook as they will get dry (happened to me the first time i cooked them). Great lunch/snack to pack when going out too!
