500grams chicken breast (cut lengthways for flatter pieces)
2/3 cup milk
1 teaspoon crushed garlic
Herbs of choice
Salt and pepper to taste (optional)
In a bowl, mix the egg, milk, garlic and herbs and spices
Dip each piece of chicken into the mixture until all covered
Coat well in Panko breadcrumbs
Pan fry for 3-4 minutes on each side or until chicken cooked through (medium heat)
Serve with steamed or fresh vegetables
In case you are wondering what panko crumbs are, they are not too different than regular breadcrumbs. While regular breadcrumbs are made using the whole bread, panko crumbs are made using bread without the crusts. So as you can imagine, it is much lighter and softer than regular breadcrumbs. The Japanese use panko crumbs in their dishes, which is you'll notice and love the lovely texture and lightness of the crumbs on some deep fried Japanese food!
Panko crumbs are inexpensive to buy but super easy to make at home using white bread without crusts - leave the bread out for a few hours to dry out a little then crumble with fingers or use a food processor!
I use panko on chicken and fish and it tastes just as good baked and pan fried. The super soft texture means it is easier for little ones to eat!
