1 cup Arborio rice (medium grain rice will also do)
2 cups water
1 cup milk
4 cardamon pods
3 tablespoons sugar/sweetner of choice
Fresh fruit for topping
Wash the rice and place in a pan with 2 cups of boiling water. Bring to a boil, then lower temperature to simmer
Place the lid on the pan and let simmer for 10 minutes, then remove lid and let simmer until the rice is nearly cooked (al dente) and water has evaporated
Add the milk and sweetner, cardamon and cook, stirring every few minutes so the rice doesn't stick to the pan
Cook until the rice is soft and the milk has evaporated down into a creamy texture
Serve with fresh fruit as topping!
Jacob loves rice pudding. I often make it for him for breakfast so make it a little runnier than I would like it as it's easier to have. You can add coconut milk as well as cream to give it more texture and flavour as well as anything else really! I add cardamon as traditionally this is what my mum would add when she makes rice pudding, so I guess it is just what I am used to. You can substitute this for vanilla or cinnamom.
